Colombia – where mountains and microclimate create quality

Colombia's reputation for quality is built on hard work and unique terrain. The three Andean cordilleras create a variety of microclimates between valleys and mountain slopes. These variations in altitude, temperature and humidity give the coffee a complexity that has made Colombia an obvious player in specialty coffee.

Just before the three mountain ranges meet in southern Colombia lies the city of Popayán , capital of the state of Cauca. It is often called “Ciudad Blanca” – the White City – due to its colonial architecture.

This is where our coffee Las Guzmanias comes from.

Smallholders and cooperation

The coffee is grown by small-scale farmers with farms of 5–10 hectares. After harvesting, the smaller batches are transported to washing stations where they are combined into larger lots – without losing their original character.

It is this lot that became Las Guzmanias , a washed Colombian coffee that delivers both structure and sweetness.

Variety – Castillo

Las Guzmanias is made from the Castillo variety, an Arabica variety that is well adapted to Colombia's climate.

Castillo provides:

  • good sweetness

  • stable body

  • balanced acidity

  • clear fruitiness

Properly grown and processed, it produces a cup that is both accessible and nuanced.

Process – washed

Las Guzmanias are washed , which means the pulp is removed before the bean is dried. This results in a cleaner, clearer cup with a clearer structure.

Washed Colombian coffees are known for:

  • balance
