Why does my coffee taste bitter? (instant solution)

Why does my coffee taste bitter? (and how to fix it right away)

Has your coffee started to taste bitter – even though you bought good beans?

You are not alone.
Bitter coffee is one of the most common problems – and it can almost always be solved.

In this guide, we'll show you exactly why your coffee turns bitter and how to fix it step by step .

Quick answer: why your coffee tastes bitter

The most common causes are:

  • You're brewing too long.
  • Too fine grinding
  • Too hot water

The result: overextraction   (you are extracting too much flavor from the coffee)

1. You brew too long

If the coffee brews too long, it can become bitter.

Example:

  • Pressed pot → over 4–5 min = bitter
  • Filter → too slow flow

Solution:
Shorter brewing time = cleaner taste

2. Grinding degree too fine

The finer the coffee → the more flavor is extracted.

Too nice coffee =
too much bitterness

Solution:

  • Filter → medium grind
  • Press pot → coarsely ground
  • Espresso → fine (but precisely adjusted)

3. Too hot water

Boiling water “burns” the coffee.

Perfect temperature: 92-96°C

Solution:

  • Let the water rest for 30–60 seconds after boiling.

4. Incorrect coffee dosage

Too much coffee → intense and bitter
Too little coffee → weak and unbalanced

Good guideline:
60 grams of coffee per liter of water

5. Wrong coffee (yes, it matters)

Some coffees taste more bitter naturally:

  • Too dark roast → more roasted, bitter notes
  • Low quality coffee → often over roasted

Try instead:

  • Light rust or medium rust
  • Fresh specialty coffee
  • Good dark roasted specialty coffee

Common mistakes (that ruin coffee)

❌ Boiling water directly on the coffee
❌ Cheap, old coffee
❌ Wrong grind for the brewing method
❌ Brewing time too long

How to remove bitterness immediately (checklist)

Do this:

✔ Shorter brewing time
✔ Coarser grinding
✔ Lower temperature
✔ Try different coffees

Small adjustments make a big difference
