In coffee farming, people sometimes talk about a "silver bullet" – a variety that solves several problems at once. Papayo is just such a variety. It combines fantastic agronomic properties with an exceptional cup profile:
Climate-Resistant and Compact: The trees are naturally compact in size, making them much easier for farmers to handle and harvest. They are also highly resistant to both drought and the dreaded fungal disease leaf rust – two crucial factors for sustainable coffee farming as climate change challenges the industry.
Economically sustainable: Papayo produces a high yield. This means that coffee growers can secure their financial viability while delivering a premium product that is absolutely world-class.
The moment you taste the fresh, sticky mucilage that surrounds the coffee seed on the tree, you are greeted with an explosion of sweetness and floral notes. What is unique about Papayo is how amazingly well these qualities are preserved throughout the entire processing and roasting process, right up to your cup of coffee.
Behind this specific batch stands producer Diofanor and his skilled team at the La Divisa estate. To achieve a Cup Score of 88.5 points, extremely careful craftsmanship is required at every step:
Selective Harvest: Diofanor and his team handpick and selectively harvest only the absolute ripest, perfectly colored cherries.
Floating sorting and hand cleaning: The cherries are transported to the sorting area at La Divisa where they are hand-sorted and floated in water tanks to remove defective or under-ripe beans and beans with low density.
30 hours of controlled underwater fermentation: This is the critical stage where the flavor profile deepens. By following a strict and calibrated protocol (developed in collaboration with Cofinet), sugars and organic acids are gradually broken down. The process is meticulously timed for 30 hours to find the perfect balance between developing complexity and preserving the original character of the bean.
💧 Sustainable water use Just as we at Hälla Kafferosteri value sustainability, Diofanor also works actively to conserve nature's resources. All water used during the float sorting and washing process is carefully recycled and reused for subsequent batches of coffee cherries.
After fermentation, the cherries are pressed and the mucus is carefully washed away. The pure coffee is then spread out in so-called parabolic dryers. Diofanor monitors the drying process around the clock to ensure a completely even process until the coffee reaches the perfect moisture content. 9.5%–11% .
Thanks to the careful, washed process, the coffee acquires an incredibly bright, clean and lively character. It offers a perfectly harmonious balance between an elegant fruity acidity and a deep sweetness.
Flavor notes: Fine, bright flowers, crunchy red apple, smooth dark chocolate and a rich sweetness of panela (unrefined cane sugar).
Brewing tips from the roastery: To truly experience the subtle floral notes and fresh acidity of the red apple, we highly recommend brewing this coffee by hand (V60 or Chemex) . Use a clean filter and slightly softer water to allow all the complex layers of flavor to bloom properly.
