Created to promote greater representation and raise quality - Cedros Coffee!

This coffee consists of smaller batches from several small farmers with 1-3 hectares of farms each and is located at altitudes of 1500 - 2000 meters above sea level in Cajamarca. These farmers mainly grow Pache. They have their small individual beneficios where they depulp, ferment, wash and dry the coffee themselves.


Cedros is a small cooperative that invests heavily in the production of specialties, both micro batches for individual farmers and these beautiful high-quality blends. Cafe Selva Norte is a coffee quality and education program and the cooperative is committed to reforestation as part of its sustainability initiative.


Cooperativa de Servicios Múltiples Cedros Café (Cedros) was established on May 10, 2013 in the Cajamarca region of northern Peru. This cooperative consists of approximately 300 members and was created with the aim of promoting greater representation and participation among its members. It provides increased access to public and private funding and is actively involved in developing niche markets and contributing to the social coffee movement both nationally and internationally.


Cedros Café operates in a diverse area that spans the province of San Ignacio in the districts of Tabacones and La Coipa, and the province of Jaen in the districts of Bellavista, Colasay, Huabal, Las Parias and San Jose del Alto. The cooperative plays a crucial role in connecting local farmers and families.


Harvest & Post-harvest - The cooperative's members grow a range of coffee varieties such as Caturra, Pache, Catuai, Typica, Bourbon and Catimor. The harvest is measured in "Lata" (buckets), where 1 lata is equivalent to 13.5 kg of cherries. A quintal of green (46 kg) is equivalent to 20 latas but is measured in parchment quintals, which indicates enough parchment for 46 kg of green after grinding (55.2 kg of parchment). Farms typically yield 15-18 quintals of green coffee per hectare, with well-managed farms doubling these volumes. The program emphasizes the importance of investing in communities for a sustainable and consistent coffee supply.


Their coffee is processed with fermentation times ranging from 15 to 48 hours, dried for 12 to 25 days, and thrives at altitudes between 1550 and 2020 meters above sea level. Cedros Café, with its commitment to quality and community, is a valuable contributor to the coffee landscape in the region.


Encouraging Quality - Cedros Café actively encourages and supports its members by offering premiums based on the quality of the coffee, providing essential farm infrastructure such as solar dryers, and implementing advanced post-harvest processing equipment such as pulping machines and fermentation tanks. The cooperative is dedicated to improving quality through various initiatives, all complemented by hands-on training.
