Craft and Sustainability: Finca El Mirador, Pink Bourbon! We got our hands on 25kg of this super coffee.

Segundo Aurelio Lasso is a small farmer from the community of Las Aguilas in La Argentina, Huila. This naturally processed Pink Bourbon lot comes from his Finca El Mirador, a 2-hectare farm at 1,850m above sea level. Segundo is a tireless worker. Together with his wife Gisella and their daughter Nicole, they grow varieties such as Gesha, Pink Bourbon and Caturra with their main goal, striving for quality. Segundo also supports his local community both with employment during the harvest season but also by helping his workers grow their own coffee.


This lot is naturally processed with an extended 46-hour anaerobic fermentation. Coffee berries are selectively harvested by hand, washed, fermented in the absence of oxygen for 46 hours, and then dried in a marquesinha (a specialized drying tent) for 20–25 days, with the coffee turned once a day to ensure consistent drying.


History of Coffee in Colombia

As with many coffee origins, it is believed that coffee was first brought to Colombia by priests, arriving perhaps within a decade or two of coffee first arriving in the Americas via the Caribbean in the first half of the 17th century. It was likely a garden crop grown for local consumption and barter for decades. Unlike other coffee regions, we have the story of a priest named Francisco Romero, who could be called the father of commercial coffee farming in Colombia. The folkloric story goes that in the early 19th century, Father Francisco, who was hearing confessions in the northeastern city of Salazar de la Palmas, gave his parishioners the task of planting coffee as a penance for their sins. The Archbishop of Colombia heard about this and ordered all priests to adopt this practice. Commercial coffee production expanded rapidly, moving into regions where growing conditions were ideal.


The Huila region is well known for the quality of its coffee, but also for being the first historical department in Colombia to begin coffee production. Farmers in Huila are very quality conscious. Their crops receive a lot of care and attention, and they tend to be the most pioneering in adopting new processing and growing methods. The most relevant municipalities for coffee in Huila are: Pitalito, Garzón, Gigante, San Agustín, La Plata, Paicol, Acevedo, among others.


Huila coffee accounts for 18% of Colombian production. It is always in demand and is often preferred as a single origin offering for its balance between acidity and sweetness. The landscape of Huila is dominated by volcanoes and mountains, which provides a rich terroir of high altitude and fertile soil and offers a wide range of ecosystems in which coffee can be grown. There are producing farms ranging from 1,500 m.a.s.l. up to 2,300 m.a.s.l., which gives the cup profile great attributes such as light acidity and characteristic sweet tones.
