Like many other Ethiopian coffee varieties, Wush Wush takes its name from the place where it was first discovered. Wushwush is a small area in southwestern Ethiopia, located near the famous coffee regions of Jimma and Sidamo. The area is known for its fertile highlands, which also grow teas with similar sensory characteristics to Wush Wush coffee.
Over 30 years ago, the variety crossed the Atlantic to South America, on a journey similar to that of the Geisha variety. Today, Wush Wush is primarily grown in Colombia, where the high altitude and ideal growing conditions bring out its floral, fruity and elegant notes.
Wush Wush is known for its intense sweetness and fruity character. Depending on the growing area, microclimate and processing method, the flavors can vary dramatically from farm to farm.
| Property | Description |
|---|---|
| Aroma & Florality | Lavender, lilac and floral shades. |
| Fertility | Blueberries, strawberries, watermelon and dark dried fruits. |
| Sweetness & Fullness | Maple syrup, vanilla, banana and dates. |
| Processing | Often berry-dried (Natural) or experimentally fermented. |
Many describe Wush Wush as extremely sweet-like – sometimes almost like watermelon candy or tropical fruit compote – making it a perfect favorite for filter coffee or fruity espresso tonics.
Low yield: Wush Wush generally produces a lower yield per bush, making the bean rare and sought after.
Many genotypes: The variety has over 20 identified genotypes, and the appearance (morphology) of the trees can vary significantly between different plantations.
Climate resistance: Wush Wush is a hardy plant that can handle changing climate conditions well – it withstands drought, heavy rainfall and temperature variations at high altitudes.
Extracting the best flavors from Wush Wush requires enormous precision. The unique characteristics of the beans place high demands on the roaster – which is immediately noticeable in your cup:
Smaller beans, more flavor concentration: Wush Wush beans are often smaller and denser than regular Arabica beans. This means they bind a lot of sugars, which in turn gives the coffee its amazing and natural sweetness when roasted correctly.
A balanced symphony of flavors: Since Wush Wush is often refined through longer fermentations (such as berry drying or anaerobic fermentation), it is important to roast the beans with a touch of sensitivity. This allows the coffee's elegant floral and fruitiness to shine freely, without the fermentation notes taking over.
The result? A rare well-balanced cup of coffee with an intense, candy-like sweetness.
Wush Wush is an exciting contender in the specialty coffee world. With its Ethiopian roots and Colombian cultivation successes, it offers a taste experience beyond the ordinary.
