Lightly roasted coffee is for those who want to fully experience the origin of coffee.
When coffee beans are roasted lightly, more of the natural flavors from the crop are preserved, resulting in a cup with more pronounced fruitiness, fresh acidity and elegant structure.
But what does light roast actually mean? How does it differ from medium roast and dark roast? And who is it suitable for?
Here you can find the entire guide.

Light roasted coffee is beans that have been roasted for a shorter time and at a lower temperature than medium and dark roasts.
This means that:
More original tones are preserved
The acid becomes more prominent
The taste is perceived as clearer and more nuanced.
The body is lighter
Light roast is standard in specialty coffee because it shows the quality of the raw material most clearly.
The flavor varies depending on origin, altitude, and process, but common notes include:
Citrus
Red berries
Stone fruit
Jasmine
Honey
Tea-like elegance
Examples of typical origin profiles:
Ethiopia → floral, bergamot, peach
Kenya → currant, fresh acidity
Colombia → caramel, apple
Nicaragua → round fruitiness
Central America → sweetness and floral notes
This is where terroir really comes into its own.
| Property | Light rust | Dark rust |
|---|---|---|
| Acid | Higher, healthy | Lower |
| Sweetness | Natural, fruity | Caramelized |
| Body | Easy–medium | Medium–full-bodied |
| Rust tones | Discreet | Clear |
| Origin profile | Very clear | Less prominent |
Light rust is about origin. Dark rust is more about rust profile.
Light roast may have more acid – but in quality coffee it is:
balanced
fresh
integrated into the sweetness
There is a difference between sour and acidic .
Light roast coffee does best with brewing methods that enhance clarity:
V60
Kalita
Chemex
Aeropress
Filter brewer
Espresso also works, but requires careful extraction.
Light rust suits you if:
Want to feel distinct flavor nuances
Curious about the origin
Likes fruitiness
Drinking coffee black
Brews pour-over or filter
If you're used to dark roast, it may feel different at first – give it a few cups.
