Coffee from Ivory Coast: The unexpected specialty revolution
When talking about coffee from West Africa, it's easy to get caught up in the thought of bulk production and instant coffee. But beneath the surface, one of the coffee world's most exciting transformations is currently underway. We're talking about Ivory Coast – or Côte d'Ivoire – a country that has long been a hidden giant on the coffee map, but is now stepping forward and claiming its place on the specialty scene.
For decades, the country has supplied the world with raw materials for the mass market. But thanks to strong economic growth (with GDP growth averaging 7% between 2012 and 2023) and a new wave of local entrepreneurs, a vibrant, urban coffee culture has taken root. The commercial history of coffee in Ivory Coast dates back to the early 1900s, after French colonists introduced coffee trees to the island. During the 1970s and 1980s, the country experienced a huge coffee boom. Ivory Coast then emerged as the world's third largest coffee producer, just behind giants Brazil and Colombia, with annual export volumes of over 300,000 tons.
After the turn of the millennium, however, the country was hit by internal conflicts, a lack of investment in agricultural infrastructure and poor quality controls after the harvest. Production fell drastically, and the coffee that was exported ended up almost exclusively in anonymous commercial coffee blends or instant coffee powder. But as so often in the coffee world, something completely new is born from old challenges.
Geographically, Ivory Coast differs from classic Arabica countries like Ethiopia or Kenya. Instead of soaring mountain ranges, coffee is grown here in the rolling western highlands and humid coastal plains.
These conditions have made the country one of the world's most important producers of Robusta .
Small-scale craftsmanship: Despite the large historical volumes, most coffee is still grown by small farmers on family-owned plots.
Hand-picked: The harvest takes place by hand between August and January, where the absolute reddest coffee berries are picked.
Traditional processing: The most common method is the natural process, where the coffee berries are allowed to dry intact in the sun.
What makes Ivory Coast so fascinating today is the internal revolution. Previously, locals drank almost exclusively instant coffee from small roadside kiosks. Today, the specialty scene is flourishing in the country's largest city, Abidjan.
Instead of just exporting raw, green coffee beans cheaply to Europe, local players (like the pioneers at Café Continent ) have started to build vertically integrated coffee companies. This means that they own the entire chain: they work directly with the farmers, roast the coffee locally in their own roasteries, and serve it in modern specialty coffee bars. This way, the economic value remains in the country of origin.

By giving the coffee trees better care, optimizing the roasting and cleaning away defects, the coffee takes on a whole new character. It gives an incredibly full-bodied cup, low acidity, lots of crema and deep, powerful flavor notes of dark chocolate, spices and roasted nuts.
By investing in training for baristas, professional roasteries and improved equipment for farmers, Ivory Coast is showing that Robusta is no longer just a cheap filler product. It is an artisanal coffee with its own identity.
