This coffee has been grown under optimal conditions at extremely high altitudes – between 1,900 and 2,150 meters above sea level. The high altitude of the Sidamo region (and West Arsi, where Tariku Kare is also active) is an absolute key factor in being able to grow the highest quality coffee beans, so-called Grade 1 (G1).
Here, in the nutritious and well-drained reddish-brown soil, the coffee berries ripen slowly. The slow ripening process allows sugars and complex acids to develop to their maximum. The variety is a so-called Heirloom – a collective name for the indigenous, wild cultivars that originated in Ethiopia's ancient coffee forests. It is precisely this that creates that distinct and completely unique Sidama profile that coffee connoisseurs around the world are constantly searching for.
"When the coffee is processed as a G1 Natural, it is fermented with the entire coffee berry intact. This gives it a fantastic sweetness and a full, vinous texture that balances perfectly with the coffee's fresh acidity."
Between October and January, the harvest is in full swing at Tariku's plantations. To achieve the uncompromising level of quality, a strictly selective hand-picking process is applied. Only the perfectly ripe, deep red berries are picked. The beans have a sieve size of 14+ and undergo careful sorting.
The coffee is processed using the Natural method (berry-dried), which means that the coffee bean dries inside its own pulp under the Ethiopian sun. This highlights a deep, ripe fruitiness. For the batches that are washed, pure, direct spring water from the region is used to ensure a razor-sharp purity of taste.
When you brew Ethiopia Tariku Kare, you are greeted with an aroma and flavor that is both intense and elegant. The profile is sweet, balanced and deeply layered:
Ripe plums & juicy berries: An initial explosion of juicy, dark fruity sweetness.
Complex florality: A bright and elegant floral intensity that hovers over the palate.
Layered Spices & Brown Sugar: The flavor is rounded out with a warm, spicy note and a deep sweetness reminiscent of caramelized brown sugar.
