Looking Back 2025 – Kaj's 5 Most Memorable Specialty Coffees 🏆

2025 was a year where specialty coffee really got to show its full potential.

We worked with experimental fermentations, classic washed profiles, and lots that pushed the boundaries of what coffee can taste like. In total, we had about 15–20 varieties that could have all made it onto this list.

But some coffees stay longer than others.

Here are my five most memorable coffees from 2025 – the ones that defined the year for us at Hälla Kafferosteri.

🥇 La Luisa, Colombia – when coffee becomes something completely new

This was the obvious number one of the year for me.

La Luisa was a honey anaerobically processed coffee where fresh coconut and lemon were added during fermentation. The result was something that went far beyond the boundaries of classic coffee.

The flavor profile offered:

  • Clear notes of coconut

  • Fresh citrus

  • Deep sweetness

  • An almost tropical expression

It's exactly lottery tickets like this that make you realize how dynamic specialty coffee can be.

🥈 Wubanchi, Ethiopia – playful elegance

Wubanchi was number one on my list back in 2024. When we managed to get a bag for the summer of 2025, it was confirmed again.

The flavor notes were equally magical:

  • Chewing gum

  • Melon

  • Pear

A coffee that combined playful aromatics with high clarity. Ethiopia at its most expressive.

🥉 Casa De Piedra, Costa Rica – depth and complexity

This natural anaerobic coffee from Costa Rica could just as easily have taken first place.

In the cup you will find:

  • Dark syrup

  • Liqueur notes

  • Sweet melon

It was a coffee that demanded attention – and rewarded it.

4. Budwale, Uganda – real citrus

Budwale was an anaerobic natural coffee fermented with oranges.

The result was not subtle.

It was:

  • Vibrant orange

  • Fresh citrus

  • An almost exuberant expression

A coffee that showed how creative modern fermentation has become.

5. Gura AA, Kenya – classic perfection

After all the experimental processes, something classic was needed.

Gura AA was a washed coffee with notes of cherry, fresh acidity and elegant structure. Just the way a really good Kenyan coffee should taste.

Clean. Clear. Focused.

What 2025 taught us

If 2024 was about precision, then 2025 was about courage.

We saw:

  • More experimental fermentations

  • More pronounced flavor profiles

  • Greater variation within the same origin

Specialty coffee moves fast – and that's what makes it so fun to work with.
