In the famous Apaneca-Ataco region of El Salvador, Villa Galicia is a renowned coffee farm owned by Mauricio Salaverria. This 12-hectare farm is located along the picturesque “Flower Route” and benefits from rich clay and limestone soil, ideal for producing high-quality coffee. A master of post-harvest coffee processing, Mauricio has invested in an environmentally friendly processing facility and uses innovative methods to get the best out of his beans.

Villa Galicia’s origins date back over a century, when Don Manuel Ariz left Galicia, Spain, and settled in Concepción de Ataco. Recognizing the region’s potential, he began by purchasing 13.5 hectares of fertile land, which became the foundation of Villa Galicia. Mauricio continues this legacy today with dedication and an innovative approach to coffee production. One of Mauricio’s unique processing methods is the natural pineapple process, created to enhance the coffee’s tropical profile. For this method, the coffee berries are dried in the shade on raised beds for almost 30 days, much longer than the typical 10-15 days for natural coffee. This meticulous technique, which is stirred regularly to ensure even drying, allows the coffee to develop its full range of flavors.

The Apaneca-Ilamatepec mountain range, located in western El Salvador, is one of the most important coffee growing regions in the country. It accounts for approximately 60% of the country's coffee production, thanks to its fertile, volcanic soils and favorable climate for the development and production of specialty coffees. This region is home to approximately 78,000 hectares of coffee plantations, distributed across the departments of Ahuachapán, Sonsonate and Santa Ana. Economically, this mountain range generates thousands of direct and indirect jobs, from planting in nurseries to wet and dry processing to final bean preparation.

The Apaneca-Ilamatepec mountain range is also home to rich biodiversity, with cloud forests that protect endemic species of flora and fauna, in addition to restoring groundwater supplies and mitigating climate change, and serve as an important green lung and ecological corridor in the region.
