Oscar and Francisca Chacón previously relied on large multinational companies to buy their coffee berries and process them for them. But the money they received wasn't enough to cover the rising costs of organic processing and labor to pick the coffee. So in 2006, they started their own processing station, Las Lajas.

The farm is known for its innovative coffee processing methods, which include natural and honey drying of the coffee beans. This gives the coffee a unique flavor profile with notes of fruit and berries, making it one of the most sought-after coffees on the market.

To ensure the quality of the coffee, the farm only grows the highest quality specialty coffees and uses methods that are gentle on the environment. By growing the coffee sustainably, the farm can ensure that the coffee is of the highest quality while contributing to a better environment. Las Lajas has become known around the coffee world for producing unique profiles in the cup. Many who compete in barista competitions choose coffee from them.
