How is Washed specialty coffee produced?

1. Careful handpicking and sorting

Only the perfectly ripe, red specialty coffee berries are picked. Because the Washed process reveals all defects, extreme precision is required when sorting in a water bath, where ripe berries sink and unripe ones float.

2. Depulping (Mechanical peeling)

Within 24 hours of harvest, the berries are run through a machine (depulper) that squeezes away the outer skin and most of the pulp. What remains around the bean is a slippery, sugary layer of mucus (mucilage).

3. Fermentation and washing

The beans are placed in large tanks of water where they are allowed to ferment for anywhere from 12 to 72 hours. During this time, natural enzymes break down the mucus layer. When fermentation is complete, the beans are thoroughly washed with clean water in long channels until they are completely clean and rough.

4. Drying

The clean beans (still protected by their parchment skin) are spread out on African beds or patios to dry in the sun until the moisture content reaches the optimal 10–12%.
