Here in the Nordics, we love our coffee, but in recent decades the coffee world has undergone a revolution. We no longer just drink "a cup of coffee" - we seek unique taste experiences, complex aromas and traceable beans. If there is one country that personifies this new era of specialty coffee, it is Panama .

Although Panama produces a relatively small amount of coffee on the global market, its beans are among the most sought-after (and expensive) in the world. But how did this Central American country become a specialty coffee giant?

Chiriquí: The Epiceirium of Panama's Coffee Revolution

Although coffee has been grown in Panama since the early 1900s, it was long a country in the shadow of larger producers. What changed the playing field was an extremely focused shift towards quality over quantity, concentrated in the province   Chiriquí in western Panama.

According to USDA data, over 80% of all coffee grown in Panama is   Arabica , and it's in the Chiriquí highlands where the magic happens. Here, the coffee is grown at high altitude along the Central American volcanic arc, in the shadow of the country's highest point: the active Volcán Barú volcano   (3,474 meters above sea level).

Chiriquí is divided into three primary coffee regions, each of which contributes unique profiles to the coffee world:

  • Boquete: The oldest and most famous region. Known for its foggy afternoons (locally called   bajareque ) which slows down the ripening process of the coffee berries and develops enormous sweetness.

  • Tierras Altas (Volcán): The region located on the steep, southwestern slopes of Volcán Barú. Here, the extremely nutritious volcanic soil gives the coffee a completely unique character.

  • Renaissance:   The most remote and least known region, but which, thanks to its pristine landscape and volcanic soils, produces hidden treasures of the highest quality.

Did you know? Panama has over 100 distinct microclimates. The combination of winds from both the Pacific and Caribbean Seas creates weather patterns that give the coffee beans optimal conditions to develop complex acids and fruity flavors.

Geisha: The bean that put Panama on the map

It's impossible to talk about specialty coffee from Panama without mentioning   Geisha (sometimes spelled   Gesha ). This unique coffee variety has become synonymous with luxury and constantly sets new price records at international coffee auctions.

Interestingly, the Geisha bean doesn't actually originate from Panama - it originates from the birthplace of coffee, Ethiopia. It was brought to Panama in the 1960s, but it wasn't until the early 2000s that the Peterson family at Hacienda La Esmeralda farm   discovered the bean's full potential when grown at extremely high altitudes.

What does a cup of Panama Geisha taste like?

Forget the heavy, bitter taste of traditional dark roast coffee. Specialty coffee from Panama is all about clarity and elegance. A typical Geisha offers:

  • Outstanding floral aroma   (think jasmine and bergamot).

  • A vibrant, vibrant acidity .

  • Tasting notes of   sweet citrus, tropical fruit and sometimes stone fruits like peach.

In addition to Geisha, Panamanian producers also grow other high-quality varieties with fantastic results, such as:   Catuai, Caturra, Pacamara and   New World .

The craftsmanship behind the cup

What ultimately elevates Panama's specialty coffee to the absolute top of the world is the innovative power of its producers. Instead of relying solely on traditional washed coffee, Panamanian farms are experimenting extensively with processing methods.

Here you'll find coffees processed through advanced b先進 fermentation , anaerobic processing (without oxygen), and carbonic maceration . These methods bring out even more complex, funky, and full-bodied flavors from the beans.

The difference in quality is noticeable all the way to the cup. For a coffee to be classified as specialty coffee, it must score at least 80 points on the SCA (Specialty Coffee Association) scale. Panama's best coffees often score well over 90 points.
