Ethiopia is often called the cradle of coffee .
It was here, in the dense forests, that Coffea Arabica grew wild – long before coffee became a global beverage.
Now we have roasted a coffee from Yirgacheffe – one of Ethiopia's most celebrated regions – in a darker profile that provides depth, sweetness and structure without losing its original character.

Yirgacheffe is located in the Gedeo Zone of southern Ethiopia, at altitudes between 1800–2200 meters above sea level .
The high altitude provides:
Slow maturation
Complex acid
Distinct aroma
High sweetness
That's why Yirgacheffe coffee is often associated with:
Florality
Red berries
Tropical fruit
The coffee is processed at Alemayehu Tilahun's washing station in Gedeo .
Alemayehu has been working with coffee for almost 20 years and built his wet grinder in 2018 with a clear goal:
Buying red, fully ripe cherries exclusively from nearby farmers.
His success is based on:
Long-term relationships
Local anchoring
Transparency
Trust in the production sector
This coffee is washed , which gives a clear and clean cup.
The process looks like this:
Hand picking of ripe cherries
Manual sorting
Massaging where the peel and pulp are removed
Density sorting in the machine
Fermentation under water for 48–100 hours (average 72 hours)
Final sorting
Soaking in clean water
Drying on raised beds for 8–20 days
The result is a coffee with a clear structure and transparent flavor profile.
Despite the darker roasting, the original character remains:
Tropical tones
Floral aroma
Red berries
Round body
The roasting adds extra depth and sweetness, but still allows Yirgacheffe's elegance to shine through.
It is a perfect balance between:
👉 Origin
👉 Rust character
👉 Structure
Compared to:
Classic dark roast Brazil – more nutty and chocolate
Sumatra – more spicy and earthy
Kenya – higher acidity and currants
…this Yirgacheffe stands for:
👉 More floral dark rust
👉 More fruitiness
👉 Elegant structure
It is a dark roasted coffee with clarity of origin.
